Skinny Bacon Ranch Chicken Bake

There’s just something comforting about a homemade casserole and this Skinny Bacon Ranch Chicken Bake has all of the best flavors-chicken, creamy cream cheese mixed with green onions, ranch, bacon! It’s naturally gluten-free, low carb, and makes for the tastiest weekday dinner!

Ingredients

  • 4 ( 4 oz.) boneless, skinless chicken breasts, thin cut 
  • Salt and black pepper, to taste 
  • 5 oz. reduced fat cream cheese softened
  • 3 Tbsp light mayo or non fat plain Greek yogurt 
  • 6 slices precooked or center cut bacon, cooked and crumbled 
  • 3 green onions, chopped 
  • 1 cup reduced fat or fat free cheddar cheese, shredded, divided 
  • 1 Tbsp Hidden Valley ranch dry mix powder

Instructions

  1. Preheat the oven to 350˚degrees. 
  2. In a medium size mixing bowl, mix the softened light cream cheese and light mayo until smooth. 
  3. Stir in bacon crumbles, green onion,  1/2 cup of the reduced fat cheddar cheese, and ranch powder together until combined.
  4. Spray a 3-quart baking dish with non stick cooking spray.
  5. Season chicken breast with salt and pepper. Lay chicken breasts in prepared baking dish.
  6. Spread the cheese mixture over the chicken breasts. Top with remaining cheddar cheese.
  7. Bake uncovered for 30-40 minutes or until chicken is cooked through or until it reaches 165˚degrees internal temperature. 
  8. Garnish with additional bacon and green onions, if desired.
  9. Store leftovers in an airtight container for up to 4 days in the fridge.
