There are some desserts that instantly transport you back to the happiest moments in your kitchen, and Chocolate Covered Brownie Bars are exactly that kind of treat for me. Ingredients

  • Brownie Layer

  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ⅓ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • Chocolate Coating
  • 1½ cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil or butter

Instructions

Make the Brownie Bars

  • Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
  • In a bowl, whisk melted butter and sugar until smooth.
  • Add eggs and vanilla, mixing until fully combined.
  • Stir in cocoa powder, flour, salt, and baking powder just until incorporated.
  • Spread batter evenly into the prepared pan.
  • Bake for 22–25 minutes, or until a toothpick inserted comes out with moist crumbs.
  • Let brownies cool completely, then slice into bars.

Add the Chocolate Coating

  • Melt chocolate chips and coconut oil together using a microwave or double boiler, stirring until smooth.
  • Dip each brownie bar into the melted chocolate or spread chocolate over the tops.
  • Place bars on parchment paper and refrigerate for 20–30 minutes until the coating is set.
