WW-Friendly Almond Flour Muffins (Low Points Version)

📝 Ingredients:

  • 4 tablespoons almond flour
  • 1 tablespoon coconut oil (or light butter spread)
  • 2 teaspoons baking powder
  • 2 eggs
  • Pinch of salt
  • Optional: vanilla extract or cinnamon for flavor (0 Points™)

🔪 Instructions:

  1. Preheat oven to 200°C / 390°F.
  2. In a mixing bowl, whisk the eggs with salt and optional flavorings.
  3. Add in the almond flour, baking powder, and coconut oil. Mix until fully combined.
  4. Pour the mixture into 4 lightly greased muffin molds or silicone cups.
  5. Bake for 18–20 minutes, or until golden and firm.
  6. Let cool and enjoy!
