Ingredients:
- 1 bag shredded lettuce (5 cups)
- ½ red onion, chopped
- ¼ cup lean turkey or chicken deli meat (instead of salami/pepperoni)
- ¼ cup part-skim mozzarella or provolone cheese
- 1/3 cup pepperoncinis
- 10 cherry tomatoes, chopped
Dressing:
- ¼ cup light mayonnaise (or plain nonfat Greek yogurt for even fewer Points)
- 1 tbsp red wine vinegar
- 1 tsp Italian seasoning
- Salt & pepper to taste
Instructions:
- Combine lettuce, onion, deli meat, cheese, pepperoncinis, and tomatoes in a bowl.
- In a small bowl, whisk together mayo (or yogurt), vinegar, seasoning, salt, and pepper.
- Pour dressing over salad and toss to coat.
- Divide into 3 servings.
