Low-Point Italian Grinder Salad

Ingredients:

  • 1 bag shredded lettuce (5 cups)
  • ½ red onion, chopped
  • ¼ cup lean turkey or chicken deli meat (instead of salami/pepperoni)
  • ¼ cup part-skim mozzarella or provolone cheese
  • 1/3 cup pepperoncinis
  • 10 cherry tomatoes, chopped

Dressing:

  • ¼ cup light mayonnaise (or plain nonfat Greek yogurt for even fewer Points)
  • 1 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • Salt & pepper to taste

Instructions:

  1. Combine lettuce, onion, deli meat, cheese, pepperoncinis, and tomatoes in a bowl.
  2. In a small bowl, whisk together mayo (or yogurt), vinegar, seasoning, salt, and pepper.
  3. Pour dressing over salad and toss to coat.
  4. Divide into 3 servings.
