Pumpkin cheesecake mousse
Pumpkin cheesecake mousse… Guys!! If you love a yummy pumpkin dessert, you need to try this!! It is SO good, loaded with protein and worth the Only 2 points with the graham cracker and Cool Whip
Ingredients
- 1/2 cup fat free cottage cheese
- 1/2 cup pure pumpkin
- 1 T. maple syrup sugar free
- 1 ground up graham cracker square
- 2 tablespoons fat free sugar free Cool whip
- A couple shakes of each: nutmeg ground ginger, cinnamon and a very small shake of ground cloves. You could use pumpkin spice blend instead!
Instructions
- In a high speed mixer (I use my Kitchenaid food processor) blend together:
- 1/2 cup fat free cottage cheese
- 1/2 cup pure pumpkin
- 1 T. maple syrup
- A couple shakes of each: nutmeg, ground ginger, cinnamon and a very small shake of ground cloves. You could use pumpkin spice blend instead!
- Blend well until nice and smooth and creamy. Chill in refrigerator for at least 2 hours!
- Additional adds:
- 1 ground up graham cracker square
- 2 tablespoons fat free sugar free Cool whip
- I layered ours! Half of pumpkin mix, graham cracker, the rest of pumpkin mix and then topped with the Cool Whip!
