Mini Mint Chocolate Chip Cupcakes

Ingredients

  • ½ Box pillsbury Sugar Free Cake Mix
  • ¾ c Unsweetened Apple Sauce
  • 21 gm @lilys_sweets Chocolate Chips
  • 4 tbsp Unsweetened Cocoa Powder
  • 3 tbsp Water
  • Oil Spray
  • Frosting
  • 1 ½ c Fat Free Whipped Topping
  • Mint Extract to taste (I probably added 5 tsp because ya girl LOVES mint)
  • Food Coloring Optional
  • Sprinkles Optional – not included in points

Instructions

  1. Preheat oven to 350° and spray cupcake molds with oil spray (note, avoid paper cups – use either silicone or just the pan iself)
  2. – In a bowl mix together all cupcake ingredients until evenly blended
  3. – Divide evenly into 14 cupcake molds and put in the oven for ~30 minutes
  4. – While your cupcakes bake, mix together all frosting ingredients (except sprinkles) until evenly blended;
  5. – Once cupcakes cool, frost your cupcakes and enjoy!
  6. Tip: For frosting, easiest method is to pipe – just put ingredients in a sandwich bag and cut off the tip of one of the corners!
