Yogurt Cake with Blueberries

I made this yogurt cake with blueberries last night. It serves 10 and each slice is 1 weight watchers point. I added blueberries and it’s delicious!
Ingredients
- 3 eggs
- 1/2 cup fat free plain Greek yogurt
- 1 cup self rising flour
- 1/2 cup monk fruit sweetener
- 1/4 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1/8 tsp table salt
- Blueberries optional
Instructions
- preheat oven to 350°.
- Add parchment paper to an 8 inch cake pan and spray with cooking spray.
- Combine all ingredients in a mixing bowl and whisk until smooth. Pour into the cake pan.
- If adding blueberries, toss with flour to prevent them from sinking to the bottom of the cake.
- Drop blueberries on top of the cake and bake for 35 to 40 minutes until golden and a toothpick comes out clean. Serves 10, one point per serving.
