I made a pina colada bread last week and was trying to think of other flavors I could do so this week I made a cherry chocolate chip one. Soooo good!
Ingredients
- 1 egg
- 1 1/2 mashed ripened bananas
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup sweetener
- 1/4 cup unsweetened applesauce
- 1 cup flour
- 1/2 cup chopped or canned cherries
- 2 tbsp cherry skinny syrup
- 1/4 cup Krisda chocolate chips
- You could also use Lily’s
Instructions
- Preheat oven to 375 degrees Fahrenheit.
- Spray a 9 x 5 loaf pan with non-stick cooking spray.
- Add Applesauce and sweetener to a large bowl and mix together until nice and fluffy
- In a small bowl, beat egg using a fork.
- Add the egg to the sugar mixture and mix until combined.
- Add mashed bananas to the sugar mixture and mix until combined.
- Stir in syrups
- Sift together flour, baking soda, and salt.
- Slowly add the sifted flour ingredients to the banana mixture and mix until flour is just combined.
- Toss cherries with 1 tablespoon flour.
- Fold the chocolate chips and floured-covered cherries into the batter.
- Pour the batter into the prepared loaf pan
- Bake in the preheated oven for 15 minutes.
- Reduce the heat to 350 degrees Fahrenheit and bake for an additional 30 minutes.
- The bread is done when the edges are slightly brown or until a toothpick inserted into the center comes out clean.
- Let cool completely before removing from loaf pans.
