If you are not making mason jar salads, start now. Super easy and convenient. The ingredient instructions are what you need to make one jar!


  • 2 ¬†tablespoons of Olive Garden Lite Italian dressing (1 point)
  • 1 tablespoon of red wine vinegar
  • 2 tablespoon of grated carrot
  • 1 tablespoon ¬†pecorino romano cheese,
  • 1 handful of chopped red pepper
  • 1 small handful of halved grape tomatoes


  • I put everything on top of green leaf lettuce that I purchased washed and ready to eat. I cut in ribbons. The container of lettuce is just perfect for 5 jars.
  • When making them start with dressing, add hard ingredients that will not get soggy, then other veggies, then lettuce.
  • Have fun. Mine last easily a week, but rarely are they in the fridge that long.

They come together even faster if you use bagged, pre-chopped lettuce. When you are ready to dig in just, give it a shake, and dig in.  And any combination of veggies and protein works nicely here.

These also make a great lunch or side for a meal.
