This Microwave Banana Protein Bread looks boring, but it was quite tasty! Similar to banana bread.
Ingredients
- 1 cup Kodiak cakes protein pancake mix
- 1 large egg
- 1 large banana
- 1 teaspoon vanilla extract
Instructions
- I mashed one ripe banana into a large microwave safe bowl, mixed in one egg, a splash of vanilla extract, and then folded in one cup of the protein pancake mix.
- I microwaved for 2 minutes, and the very middle was still a little liquidy, so I microwaved for 30 seconds more and it was perfect.
- I flipped the bowl upside down and it plopped right out. Cut into 4 servings, it’s 2 points a slice (non diabetic plan)!
- Next time I think I might add 1/4 cup applesauce to make it even more moist
