Weight Watchers Microwave Banana Protein Bread

This Microwave Banana Protein Bread looks boring, but it was quite tasty! Similar to banana bread.

Ingredients

Instructions 

  1. I mashed one ripe banana into a large microwave safe bowl, mixed in one egg, a splash of vanilla extract, and then folded in one cup of the protein pancake mix.
  2. I microwaved for 2 minutes, and the very middle was still a little liquidy, so I microwaved for 30 seconds more and it was perfect.
  3. I flipped the bowl upside down and it plopped right out. Cut into 4 servings, it’s 2 points  a slice (non diabetic plan)!
  4. Next time I think I might add 1/4 cup applesauce to make it even more moist
