2 points

More culinary adventures coming at you hot-n-fresh! Blueberry “scones” served with “clotted cream.” This recipe was so good I ate two pieces!

Ingredients

  • Cooking spray
  • 1⅓ cup self-rising flour
  • 1 cup plain fat-free Greek yogurt
  • 1 pinch of kosher salt (or to taste)
  • 1 large egg
  • A bit of applesauce because the dough may be a bit dry
  • Stevia to taste
  • Vanilla flavoring or extract
  • Butter-flavor spray
  • 1 cup frozen blueberries

Instructions

  • Preheat the oven to 350℉.
  • Lightly coat griddle with cooking spray.
  • Place the flour and yogurt and egg in a medium bowl; stir well with a wooden spoon until just combined and then keep mixing the dough in the bowl with your hands until smooth, about 1 to 2 minutes (if the dough is too sticky to knead, add 1 to 2 tbsp of applesauce).
  • Let the dough sit for 5 minutes. (optional add stevia and vanilla extract)
  • I patted out the dough on my butter sprayed vintage cast iron griddle , sprayed the top, and dotted with frozen blueberries.
  • Bake 15-20 minutes.
