More culinary adventures coming at you hot-n-fresh! Blueberry “scones” served with “clotted cream.” This recipe was so good I ate two pieces!
Ingredients
- Cooking spray
- 1⅓ cup self-rising flour
- 1 cup plain fat-free Greek yogurt
- 1 pinch of kosher salt (or to taste)
- 1 large egg
- A bit of applesauce because the dough may be a bit dry
- Stevia to taste
- Vanilla flavoring or extract
- Butter-flavor spray
- 1 cup frozen blueberries
Instructions
- Preheat the oven to 350℉.
- Lightly coat griddle with cooking spray.
- Place the flour and yogurt and egg in a medium bowl; stir well with a wooden spoon until just combined and then keep mixing the dough in the bowl with your hands until smooth, about 1 to 2 minutes (if the dough is too sticky to knead, add 1 to 2 tbsp of applesauce).
- Let the dough sit for 5 minutes. (optional add stevia and vanilla extract)
- I patted out the dough on my butter sprayed vintage cast iron griddle , sprayed the top, and dotted with frozen blueberries.
- Bake 15-20 minutes.
