Weight Watchers Berry cheesecake

When you’re in need sweet treat, this Weight Watchers Berry Cheesecake is the perfect recipe. The summer comes with many barbecue parties and events – it’s nice to show up with a dessert that you can also enjoy eating without blowing your points for the day. This Weight Watchers Berry Cheesecake is simple to make, and you can have done ahead of time, waiting in your fridge for party day. It’s sweet, but not too sweet, and will give you a nice light dessert on a hot summer’s day. I love that it only takes about 10 minutes to whip up! 

Ingredients 1x2x3x

  • ▢1 ready made reduced fat graham crust *I buy these in the U.S, you can use the regular ones, just might want to check if it changes points
  • ▢8 oz light cream cheese, softened
  • ▢1 Tbsp sugar
  • ▢1 tsp vanilla
  • ▢1 heaping cup fat free cool whip
  • ▢1/2 cup fresh blueberries
  • ▢1/2 cup fresh strawberries

Instructions 

  • Use a food processor and puree the blueberries and strawberries together.
  • In a bowl, using an electric mixer, cream together the cream cheese, sugar, and vanilla extract until the cream cheese is light and fluffy. Add in the Cool Whip and blend till creamy.
  • Use a spatula and place the cream cheese mixture in the graham pie crust.
  • Add the pureed fruit to the top (leave 1 tablespoon aside) and mix it into the cream cheese mixture
  • Place the remaining 1 tablespoon of pureed fruit on top to finish the swirl effect.
  • Let the cheesecake sit in the fridge for at least 90 minutes.
  • Cut the cheesecake into 8 equal servings. Enjoy!
