Tortilla Spinach Egg Cheese bowl

3 point breakfast for the entire dish. I eat half with fruit for 3 pts.

Ingredients

  • Fat free mozzarella cheese
  • 1/4 cup s
  • Great Value Chopped spinach
  • 3 Tbsp
  • pico de gallo
  • 2 Tbsp
  • egg
  • 2 item s (large)
  • Mission Carb Balance Soft
  • Taco Flour Tortillas
  • 1 tortilla s
  • Fat free Cottage Cheese
  • 1 oz

Instructions

  1. Lightly spray both sides of the tortilla with cooking spray. drape a tortilla in a cooking safe bowl.
  2. Mix eggs, cottage cheese, mozzarella cheese, pico, spinach. Pour mixture into the tortilla shell in the bowl.
  3. Bake on 375 for about 30 minutes or until the egg is cooked through.
