Stuffed Pepper Casserole

If you love stuffed peppers but don’t have the patience to stuff each one, I have just the solution for you. This dish packs all that delicious flavor into one easy-to-assemble casserole!

Low-Point Stuffed Pepper Casserole

Ingredients:

 1 lb. (450g) 95% Lean Ground Beef (or 99% lean ground turkey)

 2 cups Cauliflower Rice (replaces white rice for fewer points)

 3 large Bell Peppers, diced (any color)

 1 medium Yellow Onion, chopped

 4 Garlic cloves, minced

 1 can (15 oz) Crushed Tomatoes (no sugar added)

 2 Tbsp. Tomato Paste

 1 Tbsp. Worcestershire Sauce

 1 tsp. Ground Cumin

 1 tsp. Paprika

 1/2 cup Low-Fat or Fat-Free Pepper Jack Cheese, shredded

 Salt and Black Pepper to taste

 Cooking Spray (zero points)

Instructions:

1 Preheat & Prep: Preheat your oven to 400°F (200°C). Spray a large baking dish with cooking spray.

2 Brown the Meat: In a large non-stick skillet, mist with cooking spray. Add the lean ground beef, onion, and garlic. Cook over medium-high heat until the beef is browned. Drain any excess fat if necessary.

3 Add Vegetables: Add the diced bell peppers and cook for 5-7 minutes until they start to soften.

4 Season & Simmer: Stir in the tomato paste, crushed tomatoes, cumin, paprika, salt, pepper, and Worcestershire sauce. Let it simmer for 5 minutes.

5 Add Cauliflower Rice: Fold in the cauliflower rice. Cook for another 3-4 minutes so the cauliflower absorbs the flavors but stays slightly crisp.

6 Bake: Transfer the mixture into the prepared baking dish. Spread it evenly.

7 Cheese Topping: Sprinkle the shredded pepper jack cheese over the top.

8 Final Step: Bake for 15-20 minutes, or until the cheese is bubbly and slightly golden.

9 Serve: Garnish with fresh parsley or cilantro before serving.

WW Points Note: By using 95% lean beef and cauliflower rice instead of white rice, this recipe significantly reduces the point value. Depending on your specific WW plan, this should come out to approximately 4–6 points per serving (assuming 6 servings)

Tip: If you want to add more volume for zero points, feel free to toss in extra zucchini or mushrooms during step 3!
