This Sweet potato stuffed with spinach, red pepper and chick peas is the perfect recipe! Healthy and if you follow weight watchers LOW IN POINTS!
Instructions
- 2 cans chick peas. Rinse well & roast in olive oil coated pan at 400° until slightly brown.
- Cook four sweet potatoes in the microwave for about eight minutes. Let cool a bit. Cut in half and shell out the insides. Reserve aside in a bowl.
- Chop a whole red pepper. Cook in a pan with a little olive oil and some minced garlic. Add an entire bag of fresh baby spinach. Cook through.
- combine the spinach and pepper mixture into the sweet potatoes.
- Stuff the sweet potato shells with the spinach mixture. Carefully top with the roasted chickpeas. Season with some sea salt, black pepper and crushed red pepper, if desired. I added some goat cheese onto a few. Bake in the oven for about 15 minutes at 375°. Enjoy!

If you follow weight watchers each serving is five points for me. I know some people have sweet potatoes as “a free“ food, but I don’t. Same for chickpeas/garbanzo beans.
Each serving was a half of a potato stuffed with the red peppers, spinach and scooped out potato. I’m going to say that’s three points after researching. The chickpeas… Two points.
