Skinny Strawberry Pie

1-2 Weight Watchers personal points per serving. The whole recipe for the pie filling is 4 pp for me, so 1 pp per serving. I eat without crust but make crust for the family and make myself an individual serving without crust.

Servings 4


  • 4 cups sliced/chopped strawberries
  • 1 package Sugar Free Strawberry Jello
  • 1 package Sugar Free cook ‘n serve Vanilla pudding NOT INSTANT!
  • 2 cups water
  • 1 graham cracker crust optional add points
  • Whipped Cream Lite optional add 1 pt for 2 TBS
  • OPTIONAL: Fresh blueberries and raspberries are great to mix with the strawberries to equal 4 cups.


  1. In a large microvable bowl mix 1 ½ cups water hot water with Strawberry Jello mix and let sit until dissolved.
  2. In a separate bowl mix ½ cup cold water with Vanilla Pudding mix.
  3. Combine pudding and jello mixture.
  4. Microwave 6 to 7 minutes or until mixture is clear and has thickened.
  5. Set aside to let cool (can be placed in refrigerator to speed up the process).
  6. Slice or chop strawberries.
  7. Combine Strawberries and Jello Mixture. (Optional: pour into pie shell)
  8. Place in refrigerator for 2 hours for set up.
  9. Optional: Serve with Whipping Cream.
