Tackle egg boredom with the poached eggs vegetable hash bowl. It’s a delicious new take on classic Weight Watchers-friendly ingredients you already love.

First, find a backyard egg dealer. Farmer’s market eggs can sometimes be like organic, just okay. If you want super golden rich yokes the small production flocks are the best. Check your neighborhood FB groups, they are out there.

If you are near a Trader Joe’s get the pre-prepared veggie mix.  I like to add a little hash browns in the plain hash. If no trader joes just dice up some zucchini, cauliflower, bells, onion, celery.

Last, but not least, be sure to  toss some extra protein in like smoked salmon.

Ingredients

  • Two poached eggs per serving 
  • 1/2 cup of garden vegetable hash per serving

The egg yolks create a sort of creamy sauce effect when split open.

Instructions 

  • Saute the veggies in a skillet
  • Poach your eggs in your new favorite egg-making kitchen device
  • Consider adding herbs or additional seasonal veggies of your choice to the hash or a splash of hot sauce
