Mixed Berry Muffins

Low-Point Mixed Berry Muffins (8–10 servings)

Ingredients:

  • 1 cup oat flour (or blended oats)
  • ½ cup 0% Greek yogurt
  • 2 eggs (or 1 egg + 2 egg whites)
  • 1/3 cup zero-calorie sweetener (erythritol, stevia, etc.)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries)

👩‍🍳 Instructions:

  1. Preheat oven to 180°C / 350°F
  2. Mix all ingredients except berries
  3. Gently fold in the berries
  4. Divide into muffin cups
  5. Bake for 20–25 minutes until set and lightly golden
