Low-Point Mixed Berry Muffins (8–10 servings)
Ingredients:
- 1 cup oat flour (or blended oats)
- ½ cup 0% Greek yogurt
- 2 eggs (or 1 egg + 2 egg whites)
- 1/3 cup zero-calorie sweetener (erythritol, stevia, etc.)
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 cup mixed berries (strawberries, blueberries, raspberries)
👩🍳 Instructions:
- Preheat oven to 180°C / 350°F
- Mix all ingredients except berries
- Gently fold in the berries
- Divide into muffin cups
- Bake for 20–25 minutes until set and lightly golden
