3 Points My favorite breakfast, Mexican Breakfast Chaffle and sometimes just a snack. Oh so good! I make it several times a week. ☺️ 3 weight watchers points.
Ingredients
- 2 whole eggs
- 1/4 c fat free cottage cheese
- 1-2 TBSP pico of choice
- onion powder
- garlic powder
- 1/2 tsp
- franks red hot with ranch powder
- 1/2 tsp
- 1 cup fat free shredded cheese
- Tajin
Instructions
- Mix well
- Turn on the waffle maker so it’s good and hot and then spray with Pam.
- Layer 1/2 c fat free shredded cheddar cheese on the bottom of the waffle maker and pour egg mixture over that.
- Sprinkle another 1/2 c cheese on top and close the waffle maker until it alerts you that it I done.
- Don’t try to open it before then. Lift out with a fork onto plate. I drizzle franks red hot sauce over mine and then sprinkle Tajin on it!
- Sometimes I use cilantro when I have it.
