MEDITERRANEAN TUNA SALAD RECIPE – 2 POINTS

INGREDIENTS  1x2x3x

  • 2 cans light tuna in water (drained)
  • 1 small red bell pepper (finely chopped)
  • 1/2 medium a red onion (finely chopped)
  • 1 large cucumber (diced)
  • 2 cloves of garlic (minced)
  • 1 cup garbanzo beans (drained and rinsed)
  • 1/2 cup pitted black olives (halved)
  • 1/4 cup pitted kalamata olives (halved)
  • 1/3 cup fresh parsley (finely chopped)
  • 2 tbsp olive oil
  • Juice and zest of 1 lemon
  • Salt and pepper to taste

INSTRUCTIONS 

  • Combine all ingredients in a large bowl, and toss to combine.
