- 2 cans light tuna in water (drained)
- 1 small red bell pepper (finely chopped)
- 1/2 medium a red onion (finely chopped)
- 1 large cucumber (diced)
- 2 cloves of garlic (minced)
- 1 cup garbanzo beans (drained and rinsed)
- 1/2 cup pitted black olives (halved)
- 1/4 cup pitted kalamata olives (halved)
- 1/3 cup fresh parsley (finely chopped)
- 2 tbsp olive oil
- Juice and zest of 1 lemon
- Salt and pepper to taste
INSTRUCTIONS
- Combine all ingredients in a large bowl, and toss to combine.
