Ingredients
- 1 lb 96% lean ground beef (or ground turkey)
- 1 small onion, diced
- ¾ cup uncooked white rice, rinsed
- 2½ cups low-sodium chicken or beef broth
- 1 (10.5 oz) light cream of mushroom soup
- 1 tsp garlic powder
- ½ tsp black pepper
- salt to taste
- Optional: 1–2 cups cauliflower rice
- Optional: 1 cup reduced-fat cheese (or skip)
Instructions
- Brown the meat with onion, then drain fat.
- Add rice, broth, soup, and seasonings. Mix well.
- Cover and simmer on low heat (or bake 180°C / 350°F) for ~45 minutes.
- If using cheese, add at the end and let it melt.
