I’ve been making it every single Christmas morning for many years, and it’s one of those dishes everyone expects to see when they wake up.
What I love most is how relaxed it makes the morning. Everything is assembled the night before, tucked into the fridge, and then all you have to do is pop it in the oven while gifts are being opened. No one’s hovering in the kitchen hungry — everyone just helps themselves when they’re ready. Cozy, comforting, and completely stress-free… that’s how Christmas morning should be.

INGREDIENTS
1 lb Jimmy Dean Premium Delite Turkey Sausage (or 98% Lean Ground Turkey)
2 tbsp Land O’Lakes Light Butter
1/4 Cup All-Purpose Flour
2 Cups Fat-Free Skim Milk (for the gravy)
1/2 tsp Slap Ya Mama Cajun Seasoning (optional)
1 tsp Red Pepper Flakes
8 Count Pillsbury Grands! Reduced Fat Biscuits (or Pillsbury Flaky Layers)
6 Large Eggs (0 Points)
1/4 tsp Slap Ya Mama or salt (to season the eggs)
1/8 Cup Fat-Free Skim Milk (for the eggs)
1.5 Cups Kraft Fat-Free Shredded Cheddar Cheese
1.5 Cups Kraft Reduced-Fat or Fat-Free Pepper Jack Cheese (or Mozzarella)
INSTRUCTIONS
1 Preheat & Prep: Preheat your oven to 350°F (175°C). Lightly spray a 9×13-inch baking dish with non-stick cooking spray.
2 Brown the Meat: In a large skillet over medium-high heat, add the turkey sausage. Break it apart with a spoon and cook until browned and fully cooked (about 5-7 minutes). Remove the sausage from the skillet and set aside, but keep the skillet on the heat.
3 Make the Low-Point Gravy: Lower the heat to medium. Add the 2 tablespoons of light butter to the same skillet. Once melted, sprinkle in the flour and whisk constantly for about 1 minute to cook out the raw flour taste. Slowly pour in the 2 cups of fat-free milk while whisking vigorously to avoid lumps. Stir in the red pepper flakes and Cajun seasoning. Let it simmer for 3-5 minutes until it thickens into a gravy. Stir the cooked sausage back into the gravy, then remove from heat.
4 Prepare the Egg Mixture: In a bowl, whisk together the 6 large eggs, 1/8 cup of fat-free milk, and a pinch of salt or Slap Ya Mama seasoning until fluffy.
5 Assemble the Casserole:
Cut each of the 8 unbaked biscuits into small, bite-sized pieces (quarters work best). Layer the biscuit pieces evenly at the bottom of your prepared baking dish.
Pour the egg mixture evenly over the biscuit pieces.
Pour the sausage gravy mixture on top of the eggs.
Top the entire casserole with the 3 cups of shredded fat-free/reduced-fat cheeses.
6 Bake: Bake uncovered for 30 to 35 minutes, or until the eggs are set, the biscuits are cooked through, and the cheese on top is melted and golden brown.
