We love homemade garlic butter so much that I try to keep some in the fridge. It is so handy having it all ready to go for when you need to use it. This garlic butter spread is perfect on shrimp, steak or even pasta.

Ingredients

 ▢ ½ cup Light Butter (softened at room temperature) — 5 Points

> Recommended brands: Land O’Lakes Light, I Can’t Believe It’s Not Butter! Light, or Smart Balance Light.

 ▢ 1 Tbsp Garlic (finely minced) — 0 Points

 ▢ 1 Tbsp Fresh Parsley (finely chopped) — 0 Points

 ▢ 1 pinch Sea Salt (optional, adjust to taste) — 0 Points

Soften the Butter

Prep the base

Let the light butter sit on the counter for about 15-20 minutes until it reaches room

temperature. It should be soft and easy to stir, but not melted or liquid.

Mix the Ingredients

Combine flavors

In a small mixing bowl, combine the softened light butter, minced garlic, and chopped parsley. If you like a little extra kick, you can add a pinch of sea salt or garlic powder here.

Whip it Together

Blend until smooth

Using a fork or a small spatula, vigorously mash and stir the mixture until the garlic and herbs are completely and evenly distributed throughout the butter.
