Funeral Chicken and Potato Casserole

Ingredients

  • 3 cups cooked shredded chicken breast (0 Points)
  • 30 oz frozen shredded hash browns, thawed (about 3 Points per serving)
  • 1 can 98% fat-free cream of chicken soup
  • 1 cup plain nonfat Greek yogurt
  • ½ cup reduced-fat shredded cheddar cheese
  • 4 green onions, sliced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper

Topping

  • 1 cup crushed cornflakes
  • 1 tbsp light butter, melted

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Spray a 9×13-inch baking dish with cooking spray.
  3. In a large bowl, combine chicken, hash browns, soup, Greek yogurt, cheddar cheese, green onions, garlic powder, onion powder, salt, and pepper.
  4. Spread mixture evenly in the baking dish.
  5. Mix crushed cornflakes with melted light butter and sprinkle over the top.
  6. Bake for 35-40 minutes until hot and golden brown.
  7. Let stand for 5 minutes before serving.
