Easy Air Fryer Falafel Balls

Easy Air Fryer Falafel Balls – less than one point per serving on Weight Watchers Blue

Ingredients

  • 2 15.5 ounce cans chickpeas (rinsed and drained)
  • 1 small yellow onion quartered
  • 3 garlic cloves roughly chopped
  • 1/3 cup chopped scallions
  • 1/2 cup fresh parsley roughly chopped
  • 1/3 cup fresh cilantro roughly chopped
  • 2 tsp. cumin
  • 1 tsp. coriander
  • 1 tsp. smoked paprika
  • 1 tsp. sesame seeds 1 point
  • 1/2 tsp. kosher salt
  • 1/8 tsp. Crushed red pepper flakes
  • 1 tsp. baking powder
  • 4 level TBS. all purpose flour 3 points
  • Olive oil spray

Instructions

  1. Dry the chickpeas between paper towels and on dish towel.
  2. In the food processor place the onion, garlic, scallions, parsley, cilantro, cumin, coriander, smoked paprika, sesame seeds, salt & red pepper flakes.
  3. Process until blended (about 60 seconds)
  4. Add dried chickpeas and pulse until mixture is coarse and mealy. DON’T over-blend or purée
  5. Sprinkle in the baking powder and flour (scrape down the sides of the processor with a small spatula). Pulse a few times just to incorporate the flour and baking powder.
  6. Place in a covered bowl in the refrigerator for about 2 hours.
  7. Form the falafel into 24 balls (can use ice cream scoop or about two TBS per ball). You can also flatten the balls into small disks
  8. Set them on a cookie sheet and spritz lightly with olive oil spray.
  9. Preheat air fryer to 350 degrees
  10. Transfer falafels to air fryer basket (lightly spray basket with oil first). Don’t crowd the falafel balls. Put as many in as you can fit with adequate space in between. You will have to do in batches.
  11. Cook anywhere from 15- 20 minutes, turning halfway, until golden brown.
  12. Serve in a pita pocket with Tzatziki sauce and a chopped salad made of tomatoes, red onion, parsley, cilantro, a teaspoon of olive oil, the juice of half a lemon and salt and pepper to taste.

Recipe Notes

*You should feel free to add any spices you might like to the falafel mixture in addition to what is noted. Also, the addition of some lemon juice is always welcome.
*If your air fryer is not deep you might want to flatten the falafel balls a little and make them into patties or disks.
*Refrigerate for up to four days or freeze uncooked balls for up to 3 months and defrost before air frying.
