entire recipe one point on Weight Watchers
Ingredients
- 1 large cucumber grated and liquid squeezed out
- 10-12 ounces nonfat Greek yogurt
- 1 large garlic clove
- Juice of 1/2 lemon
- 1 tsp olive oil one point
- 1/2 tsp Sumac optional
- 1/3 cup fresh mint or more to taste
- 2 TBS fresh parsley
- Salt and pepper to taste
- Fresh dill optional
Instructions
- Instructions:
- Roughly chop the garlic and place in small chopper along with the mint, parsley, olive oil & lemon juice. Blend well.
- Add this mixture to the yogurt and blend.
- Add the squeezed grated cucumber to the yogurt mixture and combine.
- Season with salt and pepper as per your taste and this is when you can add the sumac as well (or any other spices you might like). Blend well.
- Chill at least 30 minutes and garnish with additional mint and/or sumac.
