Disney’s Chocolate Covered Peanut Butter Sandwich just got healthinized!If you’re not familiar, this is a chocolate coated graham cracker, layered with a thick, sweet peanut butter filling, then coated with more chocolate! I obviously did a twist on that by making it NUT-FREE (using Sunbutter), GLUTEN-FREE, and SUGAR-FREE!
This recipe is not only peanut free, but 100% nut free altogether since I used Sunbutter (I always use the organic kind since it’s only ONE single ingredient (no added sugar or salt!).

Ingredients:
Thin, square rice cakes (I used these)
Unsweetened chocolate (I used Santa Barbara Chocolate – code: lilsipper), melted
1/2 cup organic Sunbutter
1 scoop of my x Nuzest Digestive Support Vanilla Protein Powder
Method:
Spread melted chocolate on one side of rice cakes and freeze for 2 minutes. Remove from the freezer and coat the other side and place back in the freezer. While rice cakes are in the freezer, mix sunbutter and my protein. *This thickens the sunbutter so it doesn’t “run off” the rice cakes when you apply it. Remove chocolate coated rice cakes from the freezer and evenly distribute Sunbutter mixture onto rice cakes. Top with remaining chocolate, then freeze one more time for chocolate to harden. Store in refrigerator or freezer for best results.
