Cheesy Garlic Chicken Wraps

Ingredients (Serves 4)

  • 2 cups cooked chicken breast, shredded or diced (rotisserie chicken works great)
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup reduced-fat cream cheese (softened)
  • 1/4 cup light shredded mozzarella cheese
  • 1 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 whole wheat tortillas
  • 1/2 cup fresh spinach leaves (optional)
  • Squeeze of lemon juice (optional)

Instructions

  1. Prep the Chicken: If not pre-cooked, grill or pan-sear chicken with olive oil, salt, and pepper. Shred or dice. Rotisserie chicken works too—just remove skin and bones.
  2. Cook the Garlic: Heat olive oil in a skillet. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Combine Chicken and Garlic: Add shredded chicken to the skillet. Stir and cook for 2 minutes to let the chicken soak up the garlic flavor.
  4. Make the Cheesy Sauce: In a bowl, mix cream cheese, mozzarella, Parmesan, garlic powder, onion powder, oregano, salt, and pepper until smooth.
  5. Mix Chicken and Cheese: Lower heat and stir the cheesy sauce into the chicken. Cook for 2-3 minutes until creamy and combined.
  6. Assemble the Wraps: Lay out tortillas. Add spinach (if using) and evenly divide the chicken mixture onto each tortilla.
  7. Wrap It Up: Fold in the sides of the tortilla and roll tightly.
  8. Optional Grilling: For a crispy wrap, heat a skillet and cook the wraps seam-side down for 2-3 minutes on each side until golden.
  9. Serve: Cut wraps in half and enjoy! Add a squeeze of lemon juice for extra freshness.
