About a week or so ago I asked if anyone had a recipe for carrot muffins using the Kodiak Cinnamon & Oat pancake mix. Someone kindly shared the recipe for blueberry muffins with the Kodiak mix, so this morning I made the substitutions and my carrot muffins turned out pretty good!
2 weight watchers points for one muffin.
Makes 12 muffins
Ingredients
two eggs,
half cup of no-sugar applesauce (one of the snack-sized cups),
one mashed banana,
1/4 cup of Lakanto monkfruit sugar subsitute.
1 1/2 cups Kodiak cinnamon & oat pancake mix
1 tsp baking powder.
3/4 cup shredded carrots
two little snack-sized boxes of raisins
Directions
Mix everything together a
add 1 1/2 cups Kodiak cinnamon & oat pancake mix and 1 tsp baking powder with wet ingredients. If batter is too thick, add about 1/4 to 1/2 cup of water (I used 1/4 cup). Fold in about 3/4 cup shredded carrots and two little snack-sized boxes of raisins.
Divide into 12 muffin cups and bake about 15-20 minutes at 375F. Since the pancake mix has a lot of cinnamon I didn’t add any other spices, but later I thought maybe a little vanilla or maple flavoring would be good.
