The beginnings of something amazing! I have been making this for years. the entire salad is one weight watchers point.
I followed the Mediterranean way of eating several years ago for a few years. I loved the foods, but I wasn’t losing any weight, because it really is not a “diet”. I still make quite a few of the recipes, because it really involves mostly vegetables, beans, seafood, whole grains, healthy fats, etc.
This dish can be used as a side, or I like it for a snack, on toast, with a little bit of Parmesan cheese on top. I will take it for lunches, along with a can of kippered herring, and fresh fruit.
It’s cannellini beans, fresh garlic, grape tomatoes, assorted spices and herbs and a good drizzle of olive oil. I bake it, until everything softens. You can eat it warm or cold. 
Olive oil is so good for you, it is a healthy fat. It does have points, but you use it in moderation.  — feeling great.
This beautiful, hearty, satisfying salad can be made in under 20 minutes, and you probably have a majority of the ingredients already stocked in your fridge or pantry. The salad is comprised of a quick dressing of olive oil, balsamic vinegar, salt, and pepper. Pile on the cannellini beans, halved grape tomatoes, You can pump up the veggies even more in this salad by adding a chopped cucumber and some thinly sliced red onion.
Cannellini Bean Tomato salad
Ingredients
Olive oil
1 Tsp
Balsamic vinegar
1 Tbsp
Table salt
½ tsp
Black pepper
¼ tsp, freshly ground
Canned cannellini beans
15 oz, rinsed and drained
Grape tomatoes
1 cup(s), halved
garlic clove
cut up
1 tbsp water
Instructions
In large bowl, whisk 1 tbsp water, oil, vinegar, salt, and black pepper. Add beans, tomatoes, and toss to combine. Divide salad among 2 plates. each serving is less than 1 point
