1 point per donut if you make 12. I even “created” the recipe on the WW app and it said 1 point. They were so good that I ate 4.
Ingredients
1 cup all-purpose flour
1/4 cup granulated sugar substitute (like Stevia or monk fruit)
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsweetened applesauce
1/4 cup unsweetened almond milk (or
any milk of your choice)
1 large egg
1 teaspoon vanilla extract
Zest of 1 lemon
1 cup fresh or frozen blueberries
Instructions:
1. Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick cooking spray.
2. In a large bowl, whisk together the flour, sugar substitute, baking powder, baking soda, and salt.
3. In a separate bowl, combine the applesauce, almond milk, egg, vanilla extract, and lemon zest. Mix well.
4. Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
5. Gently fold in the blueberries.
6. Spoon the batter into the
prepared donut pan, filling each
mold about 2/3 full
7. Bake in the preheated oven for 12-15 minutes or until a toothpick inserted into the center comes out clean.
8. Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Enjoy your delicious Lemon Blueberry Donuts!
