3 points Zucchini spinach cheese Lasagna Serves 4 With only a few ingredients and easy prep, you can have a filling, hearty pan of lasagna ready to go into the oven. In place of noodles, we use sliced sliced zucchini, which retains a crisp-tender texture (nowhere near mushy) after the lasagna is baked.
Ingredients
- Uncooked zucchini
- 1 large cut into 1/8-inch-thick slices
- Part skim ricotta cheese
- 1/2 cup s
- Shredded part skim mozzarella cheese
- 1/2 cup s
- 1/4 cup chopped spinach
- 1 onion
- 1/2 cup bell pepper
- 2 eggs
Instructions
- Layer sliced zucchini, chopped spinach, onion, and bell peppers, cheese and eggs in a parchment paper-lined baking dish.Make one layer of zucchini add cheese. Add beat two eggs with salt and pepper and add them to the spinach.Mix well, layer on top of layer and then add another layer of zucchini, top with cheese, and peppers and bake at 375 for 17 minutes.
