Weight Watchers Luscious Lemon Bars

Ingredients

  • •For the crust:
  • •1 cup all-purpose flour or whole wheat pastry flour
  • •3 tbsp powdered sugar
  • •1/4 cup light butter cold and cubed
  • •For the filling:
  • •2 large eggs
  • •1/2 cup granulated sugar
  • •3 tbsp all-purpose flour
  • •1/4 cup freshly squeezed lemon juice about 2 lemons
  • •Zest of 1 lemon
  • •1/4 tsp baking powder
  • •Pinch of salt
  • •Optional: 1–2 tbsp powdered sugar for dusting

Instructions

  1. 1.Preheat the oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
  2. 2.Make the crust:
  3. •In a bowl, combine the flour and powdered sugar. Cut in the light butter with a pastry cutter or your hands until the mixture resembles coarse crumbs.
  4. •Press the mixture evenly into the prepared baking dish. Bake for 10–12 minutes or until lightly golden.
  5. 3.Prepare the filling:
  6. •In a medium bowl, whisk together the eggs and sugar until smooth. Add the flour, lemon juice, lemon zest, baking powder, and salt. Mix until fully combined.
  7. •Pour the filling over the hot crust.
  8. 4.Bake:
  9. •Return the dish to the oven and bake for 20–25 minutes or until the filling is set and no longer jiggles in the center.
  10. 5.Cool and serve:
  11. •Allow the bars to cool completely in the pan. Dust with powdered sugar if desired, then cut into 16 squares.
