- •1/4 cup freshly squeezed lemon juice about 2 lemons
- •Zest of 1 lemon
- •1/4 tsp baking powder
- •Pinch of salt
- •Optional: 1–2 tbsp powdered sugar for dusting
Instructions
- 1.Preheat the oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
- 2.Make the crust:
- •In a bowl, combine the flour and powdered sugar. Cut in the light butter with a pastry cutter or your hands until the mixture resembles coarse crumbs.
- •Press the mixture evenly into the prepared baking dish. Bake for 10–12 minutes or until lightly golden.
- 3.Prepare the filling:
- •In a medium bowl, whisk together the eggs and sugar until smooth. Add the flour, lemon juice, lemon zest, baking powder, and salt. Mix until fully combined.
- •Pour the filling over the hot crust.
- 4.Bake:
