since this White Bean Tomato Soup is one weight watchers point per serving That means I can “afford” a slice of French bread and a little butter to go with! 😋

Ingredients

  • 2 cans 15 oz fire-roasted diced tomatoes
  • 2 cans 15 oz each white beans, drained and rinsed
  • 1 onion chopped
  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Optional: Red pepper flakes for added heat
  • Optional: add a handful or two of chopped fresh spinach

Instructions

  1. Sauté onions and garlic. Add spices and saute a bit more. Add everything else. Simmer 20 min. If you want it “creamy” take some out and hit it with an immersion blender and stir it back in.
