Ingredients
- 2 cans 15 oz fire-roasted diced tomatoes
- 2 cans 15 oz each white beans, drained and rinsed
- 1 onion chopped
- 3 cloves garlic minced
- 4 cups vegetable broth
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
- Optional: Red pepper flakes for added heat
- Optional: add a handful or two of chopped fresh spinach
Instructions
- Sauté onions and garlic. Add spices and saute a bit more. Add everything else. Simmer 20 min. If you want it “creamy” take some out and hit it with an immersion blender and stir it back in.
