  • 3 cups cooked and cooled farro
  • 1 cup cherry tomatoes, cut in half
  • 1 small cucumber, peeled and diced
  • 1 tablespoon capers
  • ½ cup feta cheese, crumbled
  • Juice from one lemon
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper

  • instructions
  • Place farro, tomatoes, cucumber, capers and feta cheese in a bowl and mix gently to combine.
  • Combine all remaining incredients and drizzle over salad, tasting as you go, until the salad has the right amount of dressing.
