Grab one of these Blueberry Oatmeal Bars for breakfast on the run, or cut each piece in half as a sweet snack.
Ingredients:
- 1.5 cups oatmeal
- 1 cup Greek yogurt
- 4 eggs
- 1 cup blueberries (fresh or frozen)
- 1 cup almond milk
- some Monk fruit sweetener, to taste
Instructions:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the oatmeal, Greek yogurt, eggs, almond milk, and monk fruit sweetener. Mix well until fully combined.
- Gently fold in the blueberries into the oatmeal mixture.
- Grease a baking dish with cooking spray.
- Pour the oatmeal mixture into the baking dish, spreading it out evenly.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is set and lightly golden on top.
- Once baked, remove from the oven and let it cool slightly before slicing into 6 portions.
- Serve warm and enjoy your delicious and nutritious breakfast casserole
