Weight Watchers Blueberry Oatmeal Bars

Grab one of these Blueberry Oatmeal Bars for breakfast on the run, or cut each piece in half as a sweet snack.

Ingredients:

  • 1.5 cups oatmeal
  • 1 cup Greek yogurt
  • 4 eggs
  • 1 cup blueberries (fresh or frozen)
  • 1 cup almond milk
  • some Monk fruit sweetener, to taste

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the oatmeal, Greek yogurt, eggs, almond milk, and monk fruit sweetener. Mix well until fully combined.
  3. Gently fold in the blueberries into the oatmeal mixture.
  4. Grease a baking dish with cooking spray.
  5. Pour the oatmeal mixture into the baking dish, spreading it out evenly.
  6. Bake in the preheated oven for 25-30 minutes, or until the casserole is set and lightly golden on top.
  7. Once baked, remove from the oven and let it cool slightly before slicing into 6 portions.
  8. Serve warm and enjoy your delicious and nutritious breakfast casserole
