Ingredients (Serves 6)
2 cups fresh or frozen cherries
1 box (3 oz) sugar-free cherry Jell-O
1 cup boiling water
1 cup cold water
1 cup light whipped topping
2 tbsp stevia or granulated sugar (optional)
1 tsp lemon juice
1/2 tsp vanilla extract
1/4 cup chopped almonds or walnuts (optional)
Instructions
Prepare the Gelatin Base:
Dissolve the cherry Jell-O in 1 cup boiling water, stirring for 2-3 minutes. Add 1 cup cold water and sweeten with stevia or sugar, if desired.
Prepare the Cherries:
Wash and pit fresh cherries or thaw frozen cherries, chopping them into bite-sized pieces. Toss with lemon juice.
Combine & Chill:
Add the cherries to the cooled Jell-O mixture and stir well. Pour into a serving dish and refrigerate for 3-4 hours, until set.
Add Whipped Topping:
Top the set gelatin with whipped topping, smoothing it out or making it fluffy. Garnish with optional chopped nuts for crunch.
Chill & Serve:
Refrigerate for another 30 minutes to firm up the topping. Serve chilled, garnished with extra cherries or mint if desired.
