This Spicy Cucumber Salad is a simple combination of rice vinegar, sesame oil, chili powder, salt, and garlic.

Mini cucumbers work particularly well because with their thin skins, they seem especially crunchy. Enjoy as a delicious and nutritious snack! Tthe entire recipe is just one weight watchers point.

You’ll love the savory, crunchy, colorful combination. If you can’t find  mini cukes, you can use regular or Persian cucumbers in this recipe.

For a more decorative salad, use a vegetable peeler to peel long strips down the cucumber, every 1/2-inch, before slicing.

Ingredients:

  • 1 tbsp Unseasoned rice vinegar
  • 1 tsp Toasted sesame oil (I love this one the most and it’s cheap/free shipping here)
  • ½ tsp Kosher salt
  • 1 pound (mini) cucumber
  • Lemon juice
  • Chili powder

  1. In a medium bowl, whisk together the vinegar, lemon juice chili powder, salt, and garlic; set aside.
