I made these Pumpkin Chocolate Chip waffles this morning. I figured they’re about 1 point each and with a little lite whipped topping they’re very satisfying. If you don’t have a waffle maker you can make these as pancakes! recipe makes 11 The only ingredients I measured and counted were for the Kodiak pancake mix and the Lily’s dark chocolate chips. Most of the other ingredients were from eyeballing how much.
Ingredients
- 1/2 cup Kodiak pancake mix
- 40 GMS Lily’s dark chocolate chips
- The rest are approximate measurements –
- 2/3 can pumpkin
- 1 teaspoon pumpkin pie spice
- 1 teaspoon caramel extract or maple or vanilla extract
- 2 eggs
- 3 tablespoons Swerve brown sugar
Instructions
- Mix everything together until smooth. It will be thick
- Preheat mini waffle maker and spray top and bottom plates.
- I used a #20 scoop to put the batter into the waffle maker. Cook until the light goes off and wait another 30 seconds or more because they’re very fragile.
- Repeat.
- The batter made 11 waffles but you could cook them for pancakes on a griddle to get them made faster
