Protein Packed Tomato Soup topped with cheese and crackers

Protein Packed Tomato Soup -Believe it or not you can puree cottage cheese to make homemade, high protein tomato soup that is  filling and delicious. on its own the soup is zero weight watchers points. I added two ritz crackers crushed and it was just one weight watchers point. It’s so easy and it makes an amazing tomato bisque! 

Ingredients

  • 1 cup of nonfat cottage cheese.
  • 1 can of pure tomato sauce (nothing added)- can be found in the aisle of the store with diced tomatoes, usually with Italian food.
  • -A few pieces or sundried tomatoes without oil maybe 4.
  • -1 fire roasted pepper just used jarred.
  • -salt pepper, garlic salt, basil (I didn’t measure).
  • – 1/8 cup fat free shredded cheese
  • – 2 ritz original crackers

Instructions

  1. Just put all of this in a food processor, blend it all up really good and then you can microwave it or heat it over the stove.
  2. I added a tiny bit of fat free shredded cheese and 2 crackers. Enjoy!!
