this recipe Makes 3 muffins but you can to double, triple or quadruple)and they are zero weight watchers points each

Ingredients

  • 1 large egg beaten
  • 1 banana mashed
  • 1/2 cup old fashioned rolled oats uncooked
  • 1/2 teaspoon pure vanilla extract optional

Instructions

  1. Preheat oven to 350°F. Grease 3 WW silicone muffin cups with cooking spray of choice. Set aside.
  2. Place egg in bowl and beat. Break up banana into bowl and mash into eggs. Stir oatmeal into the mixture. Gently stir in sliced strawberry (or diced raspberries).
  3. Fill 3 WW silicone muffin cups with the batter, dividing it evenly amongst the cups.
  4. Place the pan inside the preheated oven and bake for 20-25 minutes or until a toothpick is inserted and comes out clean. Let cool for 5 minutes and carefully remove each muffin (turn and they drop out of muffin cup) and serve warm.
