Protein packed pumpkin muffins
weight watchers points breakdown -naked muffins are 1 weight watchers point with 13 grams of protein!
1 muffin loaded with 1/2 TBSP roasted pumpkin seeds (1 pt), 5 Lily’s choc. Chips (0 points) & 1 TBSP of Redi Whip (0 pt) is two weight watchers points

Ingredients
1 ripe banana, mashed or 1/2 c
apple sauce
1 can pumpkin
1/3 cup unsweetened almond milk
2 tsp vanilla extract
2 eggs
1 cup vanilla or peanut butter flavored
protein powder
2 Tbsp coconut flour
1 tsp pumpkin pie spice
sprinkle salt
1/4 cup monk fruit
1 tsp baking powder
Combine ingredients and stir. Place dough in lined muffin tin, I use an ice cream scoop. I added a few chocolate chips and pumpkin seeds to the tops too. Bake at 350° for 20-25 min. Mine took 25 min and made 14 muffins.
