INGREDIENT NOTES & DETAILS

Unsalted Butter
Softened butter gives the bars richness and moisture. If using salted butter, reduce added salt slightly.

Creamy Peanut Butter
Use traditional creamy peanut butter (like shelf-stable varieties). Natural peanut butter can separate and change texture.

Granulated Sugar
Provides sweetness and helps create that classic chewy cookie bar texture.

Brown Sugar
Adds moisture and a slight caramel depth. Light or dark brown sugar both work.

Eggs
Room temperature eggs blend more smoothly into the batter.

Vanilla Extract
Enhances the peanut butter flavor and adds warmth.

All-Purpose Flour
Gives structure to this baked peanut butter recipe without making it cakey.

Baking Soda
Provides lift and keeps the bars from becoming dense.

Salt
Balances sweetness and enhances peanut flavor.

Milk (for frosting)
Creates smooth, spreadable chocolate frosting.

Unsweetened Cocoa Powder
Delivers rich chocolate flavor for that classic lunch lady topping.

Powdered Sugar
Makes the frosting silky and sweet.

STEP-BY-STEP INSTRUCTIONS

Preheat and Prepare the Pan

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.

Cream the Butter and Sugars

In a large mixing bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy — about 2–3 minutes. The mixture should look pale and creamy.

Add Peanut Butter and Wet Ingredients

Mix in the creamy peanut butter until fully incorporated. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.

Combine Dry Ingredients

In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture, mixing just until combined. Do not overmix — this keeps the bars soft.

Spread and Bake

Spread the thick batter evenly into the prepared pan. Smooth the top with a spatula.

Bake for 18–22 minutes. The edges should be lightly golden, and the center just set. Do not overbake — slightly underbaked bars stay chewy.

Prepare the Chocolate Frosting

While the bars are still warm, whisk together melted butter, cocoa powder, milk, and powdered sugar until smooth and glossy.

Frost While Warm

Pour the frosting over the warm bars and spread evenly. The warmth helps the frosting melt slightly into the top layer, creating that signature finish.

Cool Completely

Allow the bars to cool fully before slicing. This ensures clean, bakery-style squares.
