Crockpot meals are always a hit at my house. Everything cooks in the slow cooker and this meal is absolutely packed with flavor.
This recipe is super easy to make, filling, and delicious! It’s made with basic ingredients you probably already keep stocked in your pantry and refrigerator.

Ingredients
- 600g boneless skinless chicken breast
- 500g baby potatoes, halved
- 1 tbsp olive oil
- 5 garlic cloves, minced
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt & black pepper to taste
- 3/4 cup low-sodium chicken broth
- 1/3 cup light Parmesan cheese, grated
- 1/3 cup plain nonfat Greek yogurt
- Fresh parsley for garnish
Instructions
- Spray the crockpot lightly with cooking spray.
- Add potatoes to the bottom of the slow cooker.
- Season chicken with onion powder, Italian seasoning, paprika, salt, and pepper. Place on top of potatoes.
- Mix garlic, olive oil, and chicken broth together, then pour over everything.
- Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until chicken is tender.
- Remove chicken briefly and stir Greek yogurt plus Parmesan into the sauce.
- Return chicken to the crockpot and spoon sauce over the top.
- Garnish with parsley and serve warm.
