PB&J Swirl Snack Cake

Instructions

  1. 18 oz. or 1 box of Protein Buttermilk Pancake Mix, I use Kodiak
  2. 1 cup of a Peanut Butter Powder, PB2 works great. Divided
  3. 3 Eggs
  4. 1/2 cup of Unsweetened Applesauce
  5. 1 cup of Unsweetened Almond Milk
  6. 1 cup of Water + 6 tbsp.
  7. ¾ cup of Granulated Sweetener, I like Lankato Monkfruit
  8. 6 Tbsps. of Sugar Free Raspberry Preserves or flavor of choice.
  9. Preheat oven 350 degrees
  10. In a large mixing bowl, add applesauce, sweetener, eggs, 1 cup of water, ½ cup of PB Powder & milk, whisk until well combined. Add ½ of the pancake powder, mix, add the rest, mix.
  11. Pour batter into a greased 10×14 cake pan, can use a 9×13 casserole dish.
  12. Mix the rest (1/2 cup)of PB powder with 6 tbsp. of water. Heat your preserves in a microwave safe bowl, 12 seconds, stir, 10 seconds, stir, you want it a little thin.
  13. Drizzle the prepared PB Powder mix over top of batter, then do the same with warm preserves, using a butter knife, skewer or chopstick and swirl.
  14. Bake 30 minutes or until inserted toothpick comes out clean. Let cool in pan 10 minutes.
  15. Slice and serve.
  16. To Freeze – Let come to room temperature, completely cool, wrap each piece in cellophane and store together in a large freezer bag (or 2).
