The recipe is:
[3] tablespoons of cake mix,
[2] tablespoons of water,
[1] minute in the microwave!
Dig in. I store my mixes handy in a re-sealable container and a mug full of measuring tablespoons at the ready. You can make just a simple mug cake OR you can liven it up in a quickie.

Microwave Mug Cake for one
Make a chocolate mug cake (either Devils Food or Fudge Brownie), after it’s cooked top it with 1/2 container of Jello SF Chocolate Pudding. It’s like eating Lava Cake for only 3 points.
Make yellow cake in a wider base mug and use it like a shortcake. Add fresh fruit of choice (raspberries, blackberries, blueberries, sliced strawberries or sliced bananas) and top with 2/3 cup of FF Reddi Wip for a total of 3 points. You could top it with just fruit for no added points. You could also stir the fruit into the mix before you microwave it for zero points.
Other toppings or add to mix before microwaving: SF Lily’s Dark Chocolate Chips (17 chips are 1 point), chopped pecans (1 tablespoon is 1 point), reduced sugar Craisens (1 tablespoon is 1 point).
Reconstitute 1 tablespoon of PB2 powder (I add a little keto honey substitute or SF maple syrup to the PB2 to sweeten it up for no additional points). Swirl that mix into the chocolate mug cake before you microwave it for a total of 3 points.
How about 1/2 cup of Comstock Cherry or Apple no sugar added pie filling for 1 point.
