Light Cauliflower Bake (WW-Friendly & Low Points)

📝 Ingredients:

  • 2 cups cooked cauliflower florets
  • 1 oz light cream cheese (Neufchâtel or WW-friendly brand)
  • 1/2 cup low-fat shredded cheddar
  • 2 tablespoons plain nonfat Greek yogurt (instead of sour cream)
  • Salt & pepper, to taste
  • Optional: garlic powder or smoked paprika for extra flavor (0 Points™)

🍽 Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, mash or chop the cooked cauliflower slightly.
  3. Stir in the light cream cheese, Greek yogurt, and cheddar until well combined.
  4. Add salt, pepper, and any seasonings you like.
  5. Transfer mixture to a small baking dish and top with a sprinkle of cheese if desired.
  6. Bake for 15–20 minutes, or until hot and bubbly.
