Ingredients
- 1/4 tsp. ground black pepper
- 1 lemon juiced and zested
- 2 Tsp. extra virgin olive oil
- 1 cup cherry tomatoes quartered
- 1/4 cup red onion thinly sliced
- 1 small cucumber quartered
- and sliced
- 1/3 cup large pitted ripe olives
- 1 head romaine lettuce chopped
- 3 Tbsp. fat free feta crumbles
Instructions
- In a small bowl combine oregano, garlic, salt, pepper, lemon juice and zest. Drizzle in olive oil, whisk until combined.
- In a medium bowl, combine tomato, red onion, cucumber, olives, lettuce
- and cheese. Mix with dressing and serve!
