• 1/4 tsp. ground black pepper
  • 1 lemon juiced and zested
  • 2 Tsp. extra virgin olive oil
  • 1 cup cherry tomatoes quartered
  • 1/4 cup red onion thinly sliced
  • 1 small cucumber quartered
  • and sliced
  • 1/3 cup large pitted ripe olives
  • 1 head romaine lettuce chopped
  • 3 Tbsp. fat free feta crumbles


  1. In a small bowl combine oregano, garlic, salt, pepper, lemon juice and zest. Drizzle in olive oil, whisk until combined.
  2. In a medium bowl, combine tomato, red onion, cucumber, olives, lettuce
  3. and cheese. Mix with dressing and serve!
