Ingredients
- 1 lb large shrimp, peeled & deveined
- 3 cloves garlic, minced
- 2 tbsp light butter or light margarine, melted
- 2 tbsp grated Parmesan cheese
- 2 tbsp panko breadcrumbs
- 1 tbsp fresh parsley, chopped
- 1 tbsp lemon juice
- Salt and black pepper to taste
- Cooking spray
Instructions
- Preheat oven to 400°F (200°C). Lightly spray a baking dish with cooking spray.
- Arrange shrimp in a single layer in the dish.
- In a small bowl mix melted butter, garlic, lemon juice, salt, and pepper. Pour over shrimp.
- Sprinkle Parmesan, panko, and parsley evenly on top.
- Bake for 10–12 minutes until shrimp are pink and cooked through.
- Serve warm and enjoy!
Points: about 3 WW points per serving
Ingredient variation: Substitute the white wine with the same amount of low-sodium chicken broth, but do not add salt to the sauce in Step 6.
Storage: Refrigerate leftovers in an airtight container for up to 2 days. The panko topping will soften over time.
