Garlic Parmesan Baked Shrimp

Ingredients

  • 1 lb large shrimp, peeled & deveined
  • 3 cloves  garlic, minced
  • 2 tbsp light butter or light margarine, melted
  • 2 tbsp grated Parmesan  cheese
  • 2 tbsp panko breadcrumbs
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp  lemon juice
  • Salt and black pepper to taste
  • Cooking spray

Instructions

  1. Preheat oven to 400°F (200°C). Lightly spray a baking dish with cooking spray.
  2. Arrange shrimp in a single layer in the dish.
  3. In a small bowl mix melted butter, garlic, lemon juice, salt, and pepper. Pour over shrimp.
  4. Sprinkle Parmesan, panko, and parsley evenly on top.
  5. Bake for 10–12 minutes until shrimp are pink and cooked through.
  6. Serve warm and enjoy!

Points: about 3 WW points per serving

Ingredient variation: Substitute the white wine with the same amount of low-sodium chicken broth, but do not add salt to the sauce in Step 6.

Storage: Refrigerate leftovers in an airtight container for up to 2 days. The panko topping will soften over time.
