Strawberry Eton Mess Recipe
It’s no wonder this recipe is so popular – it’s simple but has such a beautiful presentation and the flavors are exciting with the fresh strawberry sauce and chunks of fresh strawberries poured over lightly sweetened homemade whipped cream. Those bits of meringue cookies add a fabulous crunch and you get a little bit of every layer with each bite.
This is bound to become your new favorite summer strawberry dessert. It works great for parties because you can make smaller portions divided between ramekins or glasses. It’s also a naturally gluten-free dessert.
Ingredients
• 600g (1lb 5oz) strawberries: Hulled and halved (0 Points).
• 200g (7oz) seasonal berries: Such as raspberries or blueberries (0 Points).
• 600ml (20fl oz) Fat-Free Greek Yogurt (0%): A great high-protein, 0-point substitute for double cream.
• 2 tbsp Granulated Sweetener: Such as Stevia or Erythritol (0 Points).
• 2-3 Readymade Meringue Nests: Crushed (approx. 3 points per nest).
• 1 tsp Vanilla Extract: For that classic dessert aroma (0 Points).
Instructions
1. Prepare the Fruit:
Take about 1/3 of the strawberries and mash them in a bowl with 1 tablespoon of the sweetener. This creates a natural, 0-point strawberry sauce. Keep the rest of the berries whole or sliced.
2. Prepare the “Cream”:
In a separate large bowl, mix the fat-free Greek yogurt with the remaining tablespoon of sweetener and the vanilla extract. Stir until smooth.
3. The Assembly:
Just before serving (to keep the crunch), gently fold the crushed meringue nests and most of the berries into the yogurt mixture.
4. Serve:
Spoon the mixture into glasses or bowls. Drizzle the mashed strawberry sauce over the top and garnish with the remaining fresh berries.
